  • 2 teaspoons sesame oil
  • 4 garlic cloves, minced
  • 2 teaspoons fresh ginger, grated
  • 4-6 dried red chilies, seeded and chopped (optional)
  • ¼ cup green onions, chopped (for garnish)
  • Steamed rice (for serving)

Directions

Step 1
Preparing the Chicken:
  • Begin by cutting the boneless, skinless chicken breasts into bite-sized pieces.
  • In a large mixing bowl, combine the chicken pieces with the beaten eggs, ensuring they are thoroughly coated.
  • In a separate bowl, place the cornstarch and dredge the egg-coated chicken in it, ensuring each piece is evenly coated.
  • Shake off any excess cornstarch from the chicken.

Step 2
Frying the Chicken:
  • In a large, deep skillet or wok, heat the vegetable oil over medium-high heat until it reaches approximately 375°F (190°C).
  • Carefully add the coated chicken pieces to the hot oil, working in batches to avoid overcrowding the pan.
  • Fry the chicken for about 3-4 minutes or until golden brown and cooked through.
  • Remove the chicken from the oil using a slotted spoon and transfer it to a paper towel-lined plate to drain excess oil.

Step 3
Preparing the Sauce:
  • In a small bowl, whisk together the soy sauce, rice wine vinegar, hoisin sauce, ketchup, sugar, cornstarch, and sesame oil until well combined. Set aside.

Step 4
Assembling the Dish:
  • In a clean skillet or wok, heat 1 tablespoon of vegetable oil over medium heat.
Add the minced garlic, grated ginger, and chopped dried red chilies (if desired) to the skillet and sauté for about 1 minute, or until fragrant.
  • Pour the prepared sauce into the skillet, stirring continuously until it thickens and coats the back of a spoon.
  • Add the fried chicken pieces to the skillet and toss them gently in the sauce until evenly coated.
  • Allow the chicken to simmer in the sauce for an additional 2-3 minutes to meld the flavors together.

Step 5
Serving:
  • Transfer the General Tso's Chicken to a serving dish.
